Easy Cooking: Salt Fish Fritters

The other day I was craving some salt fish cakes/fritters. So I came across Grace Salt Fish Fritter Mix in the local grocery store. I'm always looking for shortcuts to creating authentic-tasting Caribbean cuisine, and this tasty treat was surprisingly easy to create. I followed the simple instructions on the back of the package and made the salt fish cakes in no time! Here's what I did:

1. I added 2 cups of water to the Grace salt fish fritter mix, which is filled with wonderful seasoning.

2. I added my own salt fish (although it's not necessary) to the batter. (Before adding it, I let the salt fish soak overnight, and then I flaked it.)

3. I let the batter with the salt fish sit for 10 minutes.

4. I put about 1/2 inch of oil in a frying pan over medium heat.

5. I spooned the batter into the frying pan for each fritter and let them get golden brown on each side.

6. I removed the cooked salt fish cakes from the pan and put them on a plate with paper towel to absorb the oil.

And voila! No one new that I didn't make it from scratch. I recommend this to anyone looking for a simple and delicious Caribbean treat.
